  • Pizza Crust (parcooked)
  • 4 tablespoons Olive Oil (separated)
  • 1/4 cup Creme Fraiche
  • 4 tablespoons Capers
  • 1/4 Lb Smoked Salmon
  • Finely chopped Chives (for garnish)
  • 1/2 Onion (cut into even 1/2-inch thick rings)

    Preheat the broiler.

    4 tablespoons Olive Oil (separated)
    1/2 Onion (cut into even 1/2-inch thick rings)
    Salt
    Heat a tablespoon of olive oil in a sauté pan over medium heat. Add the onion, and season with a large pinch of salt, then toss to coat in oil. Arrange the onion into an even layer in the pan, and cook stirring occasionally, but retaining an even layer. Cook until the onions caramelize, about 10-15 minutes.

    1 Pizza Crust (parcooked)
    Broil the pizza crust until golden brown and crisp, about 5-7 minutes.

    1/4 cup Creme Fraiche
    4 tablespoons Capers
    1/4 Lb Smoked Salmon
    Finely chopped Chives (for garnish)
    Drizzle of Olive Oil
    While the pizza crust is still warm, spread evenly with the creme fraiche. Top with a layer of the smoked salmon, caramelized onions, capers, drizzle with olive oil and garnish with chives.
