Michael Symon's Smoked Salmon and Creme Fraiche Pizza
Pizza Crust (parcooked)
4 tablespoons Olive Oil (separated)
1/4 cup Creme Fraiche
4 tablespoons Capers
1/4 Lb Smoked Salmon
Finely chopped Chives (for garnish)
1/2 Onion (cut into even 1/2-inch thick rings)
- Preheat the broiler.
- Heat a tablespoon of olive oil in a sauté pan over medium heat. Add the onion, and season with a large pinch of salt, then toss to coat in oil. Arrange the onion into an even layer in the pan, and cook stirring occasionally, but retaining an even layer. Cook until the onions caramelize, about 10-15 minutes.
- Broil the pizza crust until golden brown and crisp, about 5-7 minutes.
- While the pizza crust is still warm, spread evenly with the creme fraiche. Top with a layer of the smoked salmon, caramelized onions, capers, drizzle with olive oil and garnish with chives.
