Tomato Soup & Grilled Hummus Sandwich

  • 1 Yellow Onion (diced)
  • 3 Garlic Cloves (smashed)
  • 1 1/2 teaspoons Dried Thyme
  • Extra-Virgin Olive Oil
  • Salt
  • Freshly Cracked Black Pepper
  • 2 ; 28 ounce cans Whole San Marzano Tomatoes (crushed)
  • Grilled Hummus Sandwich
  • 2 ; 14 ounce cans White Beans (drained & rinsed)
  • 3 Garlic Cloves
  • 1/2 cup Tahini
  • Juice and Zest of 2 Lemons
  • Extra-Virgin Olive Oil
  • Salt
  • Peasant Loaf (sliced)
step-by-step directions
  • Heat a sauce pot with a few tablespoons of Olive Oil over medium. Add the Onions and season with Salt. Cook for 3-4 minutes until softened translucent.
  • Add the Garlic and Thyme and cook just until fragrant, about 30 seconds.
  • Pour in the Tomatoes and season with Salt and Pepper. Bring to a boil then reduce to a simmer. Cook for 30 minutes. Puree soup with an immersion blender just before serving.
  • Portion into bowls and drizzle with a generous amount of Olive Oil. Serve with Grilled Hummus Sandwich.
  • For Sandwich:
  • Preheat a nonstick pan to medium.
  • Combine the Beans and Garlic in a food processor and puree. Add the Tahini, Lemon Juice and puree. Drizzle in Olive Oil to until it's the consistency of a think peanut butter. Adjust seasoning to taste.
  • Make sandwiches by spreading the Hummus between two slices of bread. Drizzle the outsides with Olive Oil and place in the nonstick pan. Cook, flipping once or twice, until crispy and golden on both sides.
  • Remove and cut to serve.
