Dish: Fish Fume with Shrimp & Blue Crab – Infused with Pepper Oils

1 qt seafood stock
1 fennel bulb
1 onion
1 tbsp ginger
1 tbsp lemongrass
6 shrimp
4 oz blue crab
1 cup olive oil
1 red pepper
1 green pepper
½ cup white wine
1 lb fish bones


Ginger, lemon grass, fennel bulb, onion – sweat down.

Add seafood stock and fish bones – simmer 45 min.

Finish with white wine and white pepper.

Puree peppers with olive oil.

Cook shrimp and crab over high heat. Fast sear. Finish with pepper oil.
