Dish: Salmon with Cauliflower Puree & Garlic Chips
Salt & pepper
1 cauliflower head
2 tbsp butter
½ cup cream
2 garlic cloves, roasted
1 kale head
Cook salmon skin-side down until crispy (about 3 minutes) – flip for 30 seconds. Remove from heat.
Broil/steam cauliflower in the cream w/ the garlic cloves.
When cauliflower is tender, place in a blender, add garlic cream and butter, season w/ salt & pepper.
Spray kale with cooking spray (pref. olive oil).
Bake leaves until crispy.
Serve salmon w/cauliflower puree & garlic chips on the side.
