Episode 302: Under the Sea: Tom's Cioppino

Challenge: Under the Sea

Dish: Tom's Cioppino


½ lb steamed octopus
½ lb clams
½ lb squid
1 cup chopped onion
1 cup chopped carrots
1 cup chopped celery
4 cloves garlic
1 tbsp fresh oregano
1 tbsp fresh thyme
2 qt san marzano tomatoes
½ cup kalmata olives
1 grilled lemon, cut in half
Olive oil
Red pepper
Smoked paprika

Heat olive oil in pot or Dutch oven. Add chopped onion, celery, carrots and garlic. Cook until tender. Add thyme and oregano.

Mill ½ of the tomatoes and add to sautéed vegetables. Cook until thickened.

Add octopus, clams and squid.

Add remaining tomatoes and cook until reduced.

Garnish with olives, lemon, and pepper.
