Challenge: Under the Sea

Dish: Jen's Salmon with Cauliflower Puree and Kale

Ingredients:

1 fillet salmon
1 lemon, juice
1 cauliflower head
1 cup cream
2 cloves garlic
2 bay leaves
2 tbsp butter
1 head kale
1 lemon, zest

Directions:

Salt & pepper salmon, sear and squeeze lemon juice over.

Steam cauliflower head in cream, garlic and bay leaves. Steam and puree cauliflower in butter, add cream as needed.

Bake kale leaves.

Serve individual salmon bites with small kale chips & lemon zest.
