Challenge: New Year's

Dish: Dan's Lobster Roll


1 live lobster, 2 lbs
1 brioche loaf, trimmed to whites
5 tbsp black garlic aioli
1 tbsp ossetra caviar
1 tsp tarragon, chopped
1 tsp chives, chopped fine
1 tsp parsley, chopped fine
1 tsp lemon zest
1 tsp fresh grated horseradish
1 tbsp butter
1 tbsp celery, peeled and diced
½ tbsp fennel bulb, diced

Steam and shock lobster.

Cut bread into squared and toast in batter.

Pick lobster, chip up and dry thoroughly.Mix meat with mayo, herbs and lemon zest. Place chilled and dressed meat on toast.

Garnish with celery, fennel, caviar and herbs.
