Challenge: New Year's

Dish: Daniel's Cod, Kale and Quinoa

6 oz fresh cod
2 oz red quinoa
¼ cup chopped kale
¼ cup chopped beet greens
3 pickled gold beets
1 tbsp wine soaked cranberries
1 tbsp wine soaked raisins
2 tbsp crushed pistachio
¼ cup lemon tarragon vinaigrette
3 tbsp brioche croutons
1 grapefruit segment, diced
1 tsp smoked sea salt
Grated ginger, to taste
1 tbsp shallots, minced

Cook quinoa. Dress greens with vinaigrette. Cook cod. Mix all ingredients in a bowl and top with cod. Finish with smoked salt.
