Challenge: New Year's
Dish: Tom's Pasta with Egg, Crab and Caviar
2 cups semolina
2 cups corn masa
1 tbsp salt
8 oz dried angel hair
1 lb jumbo lump crab
¼ lb butter
2 oz good caviar
1 lemon, zested
½ oz botarga, shaved
Canola oil, for frying
Separate yolks from whites.
Mix masa/cornmeal with semolina. Season with salt. Spread masa mix on sheet pan. Gently place yolks on masa mix and toss to coat.
Salt pasta water & bring to a boil.
Microplane botarga into remaining egg yolks and whisk together. Add half of the caviar to the eggs.
Melt butter & add lemon zest. Remove from heat. Gently toss crab in melted butter.
Cook pasta and add to bowl with egg mix. Top with grated parmesan, toss until covered.
Lightly fry egg yolks.
Plate tossed pasta and top with crab, fried yolks and caviar.
