Dish: Vanessa's Marinated Rib Eye With Roast Eggplant Sauce and Fennel Salad


1 eggplant
1 preserved lemon & juice
1 tbsp cumin
3 clove garlic
1 onion
1 rib eye
1 tbsp sumac
1 tbsp paprika
1 tbsp onion powder
1 tbsp garlic powder
1 bulb fennel
2 anchovy
1 lemon
3 sprigs mint


In a pot, stew eggplant, broth, blend with yogurt, preserved lemon, spices, and sautéed onion. Rub with spices on rib eye, pan sear.

Finely slice fennel, toss with citrus, anchovy, lemon and salt.
