  • 4 Arctic Char Fillets
  • Extra Virgin Olive Oil
  • Kosher Salt and Black Pepper
  • 1 pound Fingerling Potatoes
  • 1 pound King Trumpet Mushrooms (sliced)
  • 2 Jalapeño Peppers (sliced and seeded)
  • 6 tablespoons Unsalted Butter (divided)

    4 Arctic Char Fillets
    Extra Virgin Olive Oil
    Kosher Salt and Black Pepper
    Brush arctic char with olive oil, and season with salt and pepper. Roast in 375 degree oven for 10 to 12 minutes, until just barely cooked through.

    1 pound Fingerling Potatoes
    1 pound King Trumpet Mushrooms (sliced)
    2 Jalapeño Peppers (sliced and seeded)
    6 tablespoons Unsalted Butter (divided)
    Lemon
    Cook potatoes in salted water until tender. Slice when cool. Saute mushrooms and jalapenos in 4 tablespoons butter, and season to taste. Add potatoes and remaining butter to pan and toss with a squeeze of fresh lemon juice. Season to taste with salt and pepper.
