Cut rolls in half and toast lightly in a warm oven. Rub garlic directly on the bread then spread each half with both mustards. Layer the pork, then the gruyere then bacon, then pickles, then peach and jalapeno and top with another slice of gruyere.
Heat a Panini press on high and place the sandwich on the press, cook until the cheese melts and the sandwich is golden and crispy. Serve with chips.
