  • 4 tablespoons Extra Virgin Olive Oil
  • 1/2 cup Tapioca Maltodextrin
  • Olive Oil
  • 1 bunch Basil leaves 
  • Salt and Pepper to taste 
  • 1/2 Grapes 
  • 2 tablespoons aged Balsamic Vinegar 
  • 1/2 pound fresh Mozzarella 
  • Smoked Almonds

    4 tablespoons Extra Virgin Olive Oil
    1/2 cup Tapioca Maltodextrin
    Olive Oil
    Turn extra virgin olive oil into powder. Add 1/2 cup of tapioca maltodextrin to the olive oil and stir vigorously until it turns into powder. Set aside.

    1 bunch Basil leaves
    Salt and Pepper to taste
    Heat oil and fry basil leaves until crispy, dry on paper towels and season with salt. Set aside.

    1/2 Grapes
    2 tablespoons aged Balsamic Vinegar
    Peel grapes, split in half and marinate in balsamic vinegar. Set aside.

    1/2 pound fresh Mozzarella
    Smoked Almonds
    Cut mozzarella and add marinated grapes, using a microplane shred the almonds on top and top it off with the powdered olive oil and fried basil. Serve immediately.
