2 ½ lbs. Chicken breast (skinless and boneless) cut in cubes
Lime or sour orange
4 tablespoons olive oil
3 cups parboil rice
7 cups chicken broth
½ green pepper
1 medium onion (peal and whole)
1 can (10 oz.) Rotel tomatoes (Mild)
2 envelopes “Complete Seasoning” (with garlic, coriander and annatto)
Rinse the chicken breast and cut them in cubes small enough to be eaten with a fork. Season the chicken with the lime and the garlic and let them rest in the refrigerator until ready to use. Using a saucepan, cook the chicken in very little oil at high heat until it changes color.
In a rice cooker, put all the ingredient and stir well. Cover and turn it on.
Once the rice is ready, stir with a fork and serve.
Serve with maduros (sweet plantains).
