Daphne Oz's Blow Your Mind Orange Chicken Wings

2 pounds chicken wings & drumettes (separated at joint, tips removed)
canola oil (for frying)
2 cups cornstarch
2 oranges (zested and juiced, about 1/2 cup fresh squeezed orange juice)
1/2 cup honey
1 (1 inch) piece of ginger (peeled & grated)
1/4 cup olive oil
Kosher salt & freshly ground black pepper (to taste)
Preheat oven to 350º F. Fill a large, heavy-bottomed pot with a few inches of oil. Preheat oil to 360ºF.
Line a sheet tray with foil. Season chicken with salt and pepper, place on prepared sheet tray and bake for 20 minutes. Remove and set aside to cool slightly.
To a baking dish or shallow bowl, add cornstarch. Season with salt and pepper. Working in batches of 5-7, dredge chicken in cornstarch, shake off excess and fry until golden-brown and crispy. Using a spider, remove chicken to bowl with Orange Ginger Sauce. Toss to combine until well coated.
In a medium sauce pot over medium heat, add the zest and juice of oranges, honey, ginger, olive oil, salt and pepper, whisk to combine. Reduce by half until mixture is thick and sticky. Place sauce into a large bowl until wings are ready to toss.
