Chef Hunter Zampa's Deconstructed Pork Taco With Chipotle-Cilantro Vinaigrette

On the April 1st 2015 episode of "The View" Teen "Chopped" champion Chef Hunter Zampa showed the co-hosts how to make a Deconstructed Pork Taco With Chipotle-Cilantro Vinaigrette.  Chef Hunter began cooking at age six.  He would cook his Grandmother's recipes with his Father as a way to learn more about her. Deconstructed Pork Taco With Chipotle-Cilantro Vinaigrette

2 Lb. Ground Pork
1 Tsp. Cumin,
1 Tsp. Coriander
1 Tsp. Oregano
1 Tsp. Lemon Juice
2 Ears Corn On The Cob, Niblets Removed
1 Can Pinto Beans, Rinsed
1 Head Butter Lettuce,
Sliced Thinly
Queso Fresco Cheese To Top
Blue Corn Chips

For Dressing:
1 Can Chipotle Peppers In
Adobo
1Ž2 Cup Vegetable Oil
1 Cup Cilantro
1Ž4 Cup Cider Vinegar
Salt
Pepper

Puree all dressing sauce ingredients until smooth in a blender and set aside.

In a large sauté pan, cook pork, spices, beans, and corn together with vegetable oil over medium heat, until pork is fully cooked. Season with salt and pepper.

In a large salad bowl, combine pork mixture with lettuce, and toss. Before serving, dress lightly with vinaigrette, and toss. Top with cheese and crushed blue chips.
