Contrasting involves choosing foods with the opposite flavor of the wine to emphasize the flavor of each, while mirroring involves pairing the wine with food that goes well with the flavor. Clinton prefers to mirror his wines. He also states in both white wines and red wines as the color of the wine darkens, the flavor intensifies. Clintons final tip: When gifting a bottle of wine, give a medium glass of either red or white to satisfy any host!
