Red Wine Mignonette

Mario's Oyster Mignonette
  • 2 teaspoons Black Peppercorns
  • 1/2 cup finely minced Shallots
  • 1 cup Red Wine Vinegar
  • 2 tablespoons Red Wine
  • Salt to taste
  • Grind the peppercorns in a spice grinder. Sift out the larger pieces.
  • Combine all the ingredients and let marinate for at least an hour, preferably over night. (Look for oysters that are heavy and unopened. Place the oyster in a towel, with the curved side on the bottom and the flat slide on top. Stick a knife in the crevice to open, and then scrape the top to release the oyster. Top with Mignonette Sauce.)
