Theresa Gido's Tiramisu
  • 36 Lady Fingers
  • 16 ounces Mascarpone Cheese
  • 3 Egg Whites
  • 3 Egg Yolks
  • 6 tablespoons Milk
  • 6 tablespoons Splenda
  • 2 cups brewed Espresso
  • 5 tablespoons Rum
  • 5 tablespoons Orange Liqueur
  • Cocoa Powder
  • Cinnamon
  • Unsweetened Chocolate (for shaving on top)
  • Brew your espresso and mix it with the milk, 3 tablespoons of rum, 3 tablespoons of orange liqueur and 3 tablespoons of artificial sweetener in a large bowl.
  • Beat together the egg yolks, 3 tablespoons of artificial sweetener, mascrapone cheese along with the remaining rum and orange liqueur. Set aside.
  • Whip egg whites until stiff peaks form then fold them into the mascarpone mixture. Soak the ladyfingers and place down your first layer in the baking dish. Spread your mixture over the ladyfingers then sprinkle cocoa and cinnamon. Add another layer of soaked ladyfingers and the remainder of the mascarpone cheese mix.  
  • To finish, sprinkle some more cocoa powder and cinnamon and then shave some unsweetened cocoa on top. Use the rest of the ladyfingers to decorate the edges. Refrigerate for at least 3 hours! Buon appetito!
