Ingredients
Ambrosia in a Glass
  • 1/4 cup pineapple chunks (frozen)
  • 1/4 cup ice
  • 1/4 cup white rum
  • 1/4 cup coconut cream
  • 2 tablespoons orange juice
  • 1 splash grenadine
  • 2-3 Maraschino cherries (stems removed)
Garnish
  • 1 pineapple chunk (frozen and thawed)
  • 1 large marshmallow (to garnish)
  • whipped cream (to garnish)
  • 1 tablespoon sweetened coconut flakes
  • 1 Maraschino cherry (to garnish)
Directions
  • In a blender, add the frozen pineapple, ice, rum, coconut milk, orange juice and grenadine. Pulse to blend. Add the cherries and pulse a couple times, just to combine. Pour into a sherbet glass or a large coupe glass.
  • Place a pineapple chunk and marshmallow on a skewer.
  • Garnish cocktail with whipped cream, coconut flakes, marshmallow skewer and a cherry on top!
  • Helpful Tip: Remove the rum for a festive and delicious kid-friendly drink!
