Apple Cinnamon Bread Pudding in a Mug
  • 2 tablespoons butter (softened)
  • 4 large eggs
  • 1 1/3 cups milk
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 4 hot dog buns (slightly stale, cubed, about 4 cups)
  • 2 apples (peeled and cubed)
  • maple syrup (to serve, optional)
  • Butter the inside of 4 microwave-safe 8-ounce mugs.
  • In a large mixing bowl, add the eggs, milk, vanilla, sugar, cinnamon and salt, and whisk to combine. Add the hot dog buns and apples and mix to combine. Divide mixture between the mugs.
  • Microwave on high for 1 to 2 minutes, until a toothpick inserted in the center of the mug comes out clean.
  • Drizzle with maple syrup if desired.
  • Helpful Tips:
    - Make the bread puddings the day before. Cover with plastic wrap and store in the refrigerator until ready to microwave. Remove plastic before placing in the microwave.
    - Instead of using mugs, bake mixture in a casserole dish in 350ºF oven until golden brown and cooked through, about 35-40 minutes.
