Bacon Wrapped Grilled Cheese
  • 6-7 slices bacon
  • 2 slices white bread (cut 1/2-inch thick)
  • 1/4 cup cheddar cheese (shredded)
  • 1/4 cup pepper jack cheese (shredded)
Directions
  • Preheat the oven to 450ºF. Cover two ¼ baking sheets with foil. Place both baking sheets in the oven while it preheats.
  • On a clean work surface line up 3 pieces of bacon, vertically, as close to each other as possible. Starting from the bottom, fold 1 inch of every other strip of bacon up. Then lay one strip of bacon, horizontally, on top of the flat strips of bacon. Unfold the folded pieces of bacon and repeat this process by folding down the pieces that were not previously folded. Place a strip of bacon, horizontally, on top of the folded pieces, and unfold the bacon. Continue this process until you have a tight square of woven bacon.
  • Place one piece of bread in the center of the bacon lattice, top with both cheeses and finish with another piece of bread on top. Fold the lattice around the sandwich, tucking the sides in and making sure to cover all of the bread.
  • Transfer the grilled cheese to one heated baking sheet and top with the other pressing the sandwich down. Place a heavy cast iron skillet on top and baking for 18-20 minutes until the bacon is crispy and the cheese is melted.
  • Remove from oven, slice in half and serve!
