Barbecue Sauce with Espresso

Barbecue Sauce with Espresso
  • 2 tablespoons extra-virgin olive oil
  • 1 small onion (peeled, grated)
  • 1/2 cup ketchup
  • 1/3 cup strongly brewed espresso
  • 1/4 cup packed dark brown sugar
  • 2 tablespoons honey
  • 1 lemon (zest and juice)
  • 1 teaspoon celery seed
  • 1 teaspoon smoked paprika
  • 1 teaspoon Kosher salt
  • In a medium saucepan over medium-high heat, heat the oil and saute the onion until softened, about 5 minutes. Add the ketchup, dark brown sugar, honey, espresso, lemon, celery seed, paprika, and salt, bring to a boil, then lower the heat to medium-low and simmer for 35 to 40 minutes, until the sauce starts to thicken. The sauce should be a pourable, glaze consistency.
  • Tip: Brush the barbecue sauce onto a rack of ribs or your favorite grilled meat.
