Ingredients
Bri-yere Mac ‘n’ Cheese
  • 2 yellow onions (thinly sliced)
  • 1 tablespoon coconut oil
  • 1 pound multigrain elbow macaroni
  • 1 pound bacon
  • 5 cups 2% milk
  • 1 tablespoon salted butter
  • 1/4 teaspoon garlic powder
  • 1 cup Brie (rind removed and cubed)
  • 1 cup Gruyere (grated)
  • 1 cup plain panko breadcrumbs
  • salt and freshly ground blackpepper (to taste)
Directions
  • Preheat oven to 350ºF.
  • To caramelize onions, add to a sautee pan with coconut oil [or bacon fat]. Add a pinch of salt and cook down until well caramelized.
  • Cook bacon until it's crispy. Drain on paper towel and cool. Chop into pieces.
  • Mix 1 cup panko, a generous pinch of salt and fresh pepper together and set aside.
  • Rinse macaroni and add to a large pot. Add the milk, along with 1 tbsp butter, 1/4 tsp garlic powder, 1 tsp salt and fresh ground pepper. Bring to a simmer and cook the macaroni over medium-low heat for 20 - 25 minutes until desired tenderness of the noodle. Be sure to stir the whole time.
  • Once the macaroni is cooked, add 1 cup of brie and 3/4 cup of gruyere. Reserve the remaining 1/4 cup of gruyere. Mix until cheese has melted.
  • Put macaroni and cheese into individual 8 ounch ramekins.  Add layer of caramelized onions, a layer of chopped bacon, a layer of shredded gruyere, and top with panko mix.
  • Bake for 20 minutes until topping is golden brown.
