Candy Corn Blondies
  • 1 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 tablespoons unsalted butter (melted)
  • 1 1/2 cups flour
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons kosher salt
  • 1 cup candy corn (divided)
  • 1/2 cup white chocolate (chopped)
  • Preheat oven to 325ºF. Line an 8x8-inch baking dish with parchment paper and spray with nonstick cooking spray.
  • In the bowl of a mixer, beat the brown sugar and egg together until light and fluffy, about 2 minutes. Add the vanilla and melted butter and mix to just combine.
  • In a separate bowl, whisk together the flour, baking soda and salt. Add this mixture to the butter/sugar mixture and slowly mix to combine. Stir in 3/4 cup candy corn and white chocolate.
  • Pour the batter into the prepared pan, smoothing the top with a spatula. Top with remaining candy corn. Bake for 20 to 25 minutes until golden brown and cooked through. Let cool completely. Cut into squares and serve.
  • Tip: Store blondies in an air tight container at room temperature for up to a week or freeze for up to 6 months.
