Cheesy Crab Toasts
  • 1 stick unsalted butter
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon celery seed
  • 2 teaspoons Dijon mustard
  • 1 lemon (zested)
  • 1 pound jumbo lump crab meat (picked through for shells)
  • 1 cup celery (thinly sliced)
  • 1 tablespoon chives (finely chopped)
  • 1/2 pound raclette cheese (rind removed)
  • 6 slices pullman loaf bread (1/2-inch thick slices, toasted)
  • kosher salt and freshly ground black pepper (to taste)
  • In a nonstick pan, add the butter, spices, mustard and lemon zest, and place over medium heat. Allow the butter to melt.
  • In a large bowl, add the crab, celery, chives, and a pinch of salt and pepper. Pour over the melted butter mixture. Gently fold to combine, trying not to break up the crab meat too much.
  • Top toast with a scoop of warm crab salad.
  • Meanwhile, add raclette cheese to a skillet and place over medium-low heat until melted. Pour the hot, melted cheese over each piece of crab toast.
  • Tips:
    - If you can't find raclette, try a different type of cheese, such as Gruyere.
    - Use your favorite seasoning for crab salad, such as seafood seasoning.
    - Serve with a poached egg on top!
