Cinnamon Bourbon Peaches over Ice Cream
  • 6 ripe peaches (washed, peeled, pitted, sliced)
  • 2 tablespoons butter
  • 3 tablespoon bourbon (or to taste)
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon cinnamon
  • 1 tablespoon dark brown sugar
  • pinch of Kosher salt
  • vanilla ice cream (to serve)
  • Heat a large saute pan over medium heat. Add the butter and allow to melt. Continue heating the butter until golden brown and nutty.
  • Add the bourbon, vanilla, brown sugar and cinnamon and mix to combine. Add the peaches and salt and mix to combine. Allow to simmer for about 5 minutes, until the sauce thickens and the peaches soften. Serve over vanilla ice cream.
  • Tip: Try serving over shortbread or pound cake!
