Citrus Basil Mojito
  • 1 ounce simple syrup
  • Simple Syrup:
  • 1 cup sugar
  • 1 cup water
Citrus Basil Mojito:
  • 1 lime (cut into rounds, reserve 1 round for garnish)
  • 1 lemon (cut into rounds, reserve 1 round for garnish)
  • 3 leaves fresh basil (plus extra to garnish)
  • 3 leaves fresh mint
  • 1 and 1/2 ounces light rum
  • club soda
  • ice (to serve)
  • For the Simple Syrup: In a small saucepan over medium heat, add sugar and water. Stir to combine and bring to a simmer until sugar has dissolved. Remove from heat and allow to cool completely.
  • For the Citrus Basil Mojito: In a cocktail shaker, add simple syrup, 2 lime rounds, 2 lemon rounds, basil and mint. Using a muddler or the back of a wooden spoon, muddle ingredients until fragrant and juice is extracted. Pack with ice and add rum. Cover and shake vigorously. Strain and pour mixture into a low ball glass filled with ice and top off with club soda. Garnish with basil leaf, lemon rounds and lime rounds.
  • Tip: Make a large batch of simple syrup and keep in the refrigerator for up to 3 months!
