Corn Fritters with Spicy Honey
  • 1 and 1/4 cup all-purpose flour
  • 1 and 1/4 cup fine yellow cornmeal
  • 1/4 cup granulated sugar
  • 1 and 1/2 teaspoons Kosher salt
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 cup whole milk
  • 2 large eggs (beaten)
  • 1/4 cup unsalted butter (melted)
  • 1 jalapeno (seeded, finely minced)
  • 1/4 cup scallions (white and green parts only, finely sliced)
  • 1 and 1/2 cups fresh corn kernels
  • 1 hot dog (small dice, optional)
  • spicy honey (to serve)
  • 6- inch wooden skewers
  • In a large Dutch oven over medium heat, add 1-2 inches of canola oil and heat to 350ºF. Line a plate with paper towels and set aside.
  • In a large bowl, add the flour, cornmeal, sugar, salt, baking powder, and cinnamon and whisk to combine.
  • In a separate large bowl, add the milk, eggs, and melted butter and whisk to combine. Whisk the milk mixture into the flour mixture and fold in the jalapeno, scallions, corn kernels and hot dogs pieces, if using.
  • Working in batches, form the batter into small balls using a tablespoon measure or a small ice cream scoop, and gently drop the fritters into the hot oil. Fry the fritters until golden brown and cooked through, about 3-5 minutes. Remove to the prepared plate and lightly season with salt. Place the fritters on the skewers and drizzle with hot honey to serve.
  • Tip: If your local market does not carry hot honey, make your own by infusing honey with red chile flakes!
