Creamy Carrot Tomato Soup
  • 2 tablespoons coconut oil
  • 1 large red onion
  • 1 pound carrots (peeled and cut into 1-inch chunks)
  • 2 tablespoons tomato paste
  • 6 cups vegetable stock (or water)
  • 1 orange (zest & juice)
  • 1 tablespoon honey
  • 1 cup light coconut milk
  • kosher salt
  • 2 tablespoons olive oil
  • 2 zucchini (grated)
  • 2 carrots (peeled and grated)
  • 8 flour tortillas (10 inches)
  • 1 pound mozzarella cheese (shredded)
  • 1 cup cilantro leaves (optional)
  • 1 jalapeno (sliced, optional)
  • 1 lime (zest & juice, optional)
  • In a large, heavy-bottomed pot, add coconut oil and place over medium-high heat. Add the onion and carrots and season with salt. Saute until translucent and slightly caramelized, about 8 minutes. Add the tomato paste and stir to combine, cook for 1 more minute, stirring consistently. Add the vegetable stock and bring to a simmer. Cook on low for 20 minutes, until vegetables are soft and tender. Remove from heat.
  • Blend the soup until smooth. Add the orange zest and juice, honey and coconut milk. Season to taste with salt. Serve with quesadillas.
  • For the Quesadillas: in a large sauté pan, add oil and place over medium-high heat. Add the zucchini and carrots and season with salt. Sauté until the vegetables are tender, about 5 minutes. Set aside.
  • Build the quesadillas. Place a tortilla on a clean work surface. Divide the cheese and the vegetables between 4 tortillas. Place another tortilla on top of each filled tortilla.
  • Place a large, nonstick pan over medium heat. Add a quesadilla and cook until golden brown. Flip and cook on the other side until golden brown. Remove and set aside to cool slightly. Cut into 6 triangles and serve.
  • In a small bowl, combine cilantro, jalapeno and lime juice. Mix to combine. Top quesadillas for a spicy, fresh topping!
