Egyptian Kebab Sandwich
  • 1 1/4 pounds ground beef
  • 1 large onion (grated)
  • 1 tablespoon plain bread crumbs
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon ground cumin
  • 2 teaspoons salt
  • 1/2 cup feta cheese (crumbled)
  • 1 cucumber (diced)
  • 2 tablespoons olives (minced)
  • 1 tablespoon white vinegar
  • 1/4 cup pine nuts
  • 4 pita bread (toasted)
  • Preheat a grill pan over medium heat.
  • In a large bowl, combine the ground beef, grated onion, bread crumbs, parsley, cumin and salt.  Mix the meat and spices using your hands and then portion into 4-inch links. 
  • Place links onto preheated grill pan, and cook for 5-7 minutes, rotating every 2 minutes. Remove from grill and slice the kebabs lengthwise down the middle, being sure not to cut all the way through.
  • Meanwhile, mix the olive oil, pepper, vinegar, cucumber, pine nuts, feta cheese, and olives in a bowl.
  • To serve, place a kebab into the warm pita and add some of the salad mixture.
