Grilled Piña Colada
Blended Pineapple
  • 1 pineapple (cut into spears, reserve some for garnish)
Pina Colada
  • 2 tablespoons blended pineapple
  • 2 ounces white rum
  • 2 ounces cream of coconut
  • 1 ounce lime juice
  • maraschino cherry (to garnish)
  • lime wedges (to garnish)
  • crushed ice (to serve)
  • For Blended Pineapple: preheat grill or grill pan to medium-high heat. Place pineapple on grill and allow to char, about 3 minutes per side. Remove to plate and allow to cool completely. Place cool spears in the bowl of a food processor and puree until smooth. Remove to a bowl and set aside.
  • For Pina Colada: in a cocktail shaker filled with ice add blended pineapple, rum, cream of coconut, and lime juice. Shake to combine and strain over glasses filled with crushed ice. Garnish with cherry, lime wedge and pineapple spear.
  • Tip: grill extra pineapple and add it to your favorite salad!
