Joanna's Cozze in Bianco
  • 1 pound mussels (cleaned & de-bearded)
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup white wine
  • 1 tablespoon fresh chopped parsley (plus more to garnish)
  • pinch red pepper flakes
  • salt & pepper (to taste)
  • In a large sauté pan, over medium-high heat, add the olive oil.
  • When the oil is hot, add the minced garlic and red pepper flakes, and sauté until the garlic is soft and fragrant. Pour in the wine and let reduce for a couple of minutes. Add the mussels and parsley and cover the pan; stir occasionally.
  • After a couple of minutes, check to see if the mussels have opened.
  • Pour into a serving bowl, and discard the mussels which have not opened (if any). Garnish with more parsley and red pepper flakes, and season with salt and black pepper to taste.
  • Serve with crusty Italian bread, if desired.
