Lemon Cucumber Yogurt Dip
  • 2 cups Greek yougurt
  • 2 tablespoons olive oil
  • 1 lemon (zested, plus 1 teaspoon lemon juice)
  • 3 tablespoons dill (chopped)
  • 1/2 bunch scallions (thinly sliced on bias, white and light green parts only)
  • 1/2 English cucumber (finely diced)
  • freshly ground black pepper (to taste)
  • feta cheese (crumbled, to serve)
  • 1 bunch carrots (cut into sticks, to serve)
  • 1 bunch celery (cut into sticks, to serve)
  • 1 bunch radishes (quartered)
  • In a medium bowl, add the Greek yogurt, olive oil, lemon zest and juice, dill, scallions, cucumber, black pepper and stir to combine.
  • Sprinkle feta cheese on top of the dip and serve with vegetables and pita chips.
  • Tip: Pick your favorite vegetables, chips, or pretzels to serve with your dip!
