Midwestern Cheese Dip

This easy cheesy dip is the perfect dish to snack on!

Midwestern Cheese Dip
  • 8 ounces cream cheese (softened)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 1/2 tablespoons spicy brown mustard
  • 1/4 pound corned beef (thinly sliced and finely chopped, about 1 cup)
  • 1/2 cup scallions (finely sliced)
  • 1/2 cup sauerkraut (drained)
  • flaky butter crackers (to serve)
  • kosher salt and freshly ground black pepper (to taste)
  • Preheat the oven to 350ºF.
  • In a large bowl add cream cheese, cheddar cheese, mustard, corned beef, scallions and sauerkraut and mix to combine. Lightly season with salt and pepper and mix. Place in a baking dish and put in the oven to bake until cheese has melted and is slightly golden on top, about 30 minutes.
  • Remove from the oven and serve with flaky butter crackers.
