Mini Sandwich Checkerboard
  • 1 loaf dark rye bread (crusts removed)
  • 1 pack softened cream cheese (about 8 ounces each)
  • 1/2 English cucumber (thinly sliced into rings)
  • 3 jars arugula pesto (about 8 ounces each)
  • 1 loaf wheat bread (crusts removed)
  • 1 ball mozzarella (thinly sliced)
  • 2 jars sun-dried tomato pesto (about 7 ounces each)
  • 1 pint cherry tomatoes
  • 1 Cup pitted black olives
Directions
  • For the dark squares: take a piece of dark rye bread and smear one side with cream cheese. Top cream cheese with cucumber slices to cover. Smear some arugula pesto on another piece of bread and close the two slices to make a sandwich. Smear the top with more pesto. Smear another piece of bread with more cream cheese and top with cucumbers. Enclose the triple-decker sandwich. Cut the crusts off of the sandwich. Then, cut the sandwich into 4 equal squares. Repeat with remaining ingredients.
  • For the light squares: Take a piece of wheat bread and smear some sun-dried tomato pesto on top. Top with a layer of mozzarella slices. Smear another piece of wheat bread with pesto. Close the two slices to make a sandwich. Smear the top with more pesto. Top with mozzarella slices. Smear another piece of bread with more pesto. Enclose the triple-decker sandwich. Cut the crusts off of the sandwich. Then, cut the sandwich into 4 equal squares. Repeat with remaining ingredients.
  • To assemble: Alternate sandwich squares to create a checkerboard pattern of sandwiches. Prick cherry tomatoes with toothpicks and stick them on one side of the board, covering two rows of squares. Prick the olives with toothpicks and stick them on the other side of the board, covering the opposite two rows of squares.
