Mint Salsa Verde
  • 1 cup fresh Italian parsley
  • 1 cup fresh basil
  • 1 cup fresh mint
  • 2 tablespoons capers (drained and rinsed)
  • 1 seranno pepper (stem removed)
  • 1 clove garlic (peeled)
  • 1 tablespoon Dijon mustard
  • 2 salt-packed anchovy (filleted and rinsed)
  • 1 teaspoon sugar
  • 1/4 cup olive oil
  • kosher salt and freshly ground black (to taste)
  • In a food processor fitted with a blade attachment, add parsley, basil, mint, seranno pepper, capers, anchovies, garlic, mustard, sugar and pulse until a paste forms. Slowly drizzle the olive oil into the food processor. Remove to a bowl and season with salt and pepper, to taste.
  • Tip: Make the salsa verde ahead of time and serve with chicken, fish, beef, or pork.
