Peach Sweet Tea Mocktail
Black Tea Simple Syrup:
  • 1 cup sugar
  • 1 cup water
  • 2 black tea bags
  • 1/2 cup finely ground almonds
  • 1/2 cup sugar
  • 1/2 cup frozen peaches
  • 1 tablespoon peach jam
  • 1/8 teaspoon almond extract
  • 2 tablespoons black tea simple syrup
  • 1/3 cup soda water
  • ice (to serve)
  • For the Simple Syrup: in a small saucepan, add sugar and water and heat over medium heat until sugar dissolves. Add tea bags, cover and allow to steep, about 5 minutes. Remove tea bags and allow simple syrup to cool completely.
  • For the Mocktail: mix almonds and sugar together on a plate. Dampen the rim of glass with lemon juice or water then in the almond sugar mixture.
  • In the carafe of a blender, add the peaches, jam and almond extract. Blend until smooth. If necessary use a little water to loosen. Remove to a collins glass filled with ice. Add simple syrup and mix to combine. Top with soda water and serve.
  • Helpful Tip: store simple syrup for up to 1 month in the fridge to sweeten any beverage.
