Roast Beef, Cheddar, and Chutney Crostini
  • 1 baguette (cut into 1/2-inch slices)
  • 1/4 cup olive oil
  • 1/2 pound roast beef (thinly sliced)
  • 1/4 cup store-bought mango chutney
  • 1/2 (3.5-ounce) block cheddar cheese (thinly sliced)
  • red pepper flakes (optional)
  • flaky sea salt (to taste)
  • Preheat the grill or broiler for 15 to 20 minutes.
  • Brush the tops of the bread slices with olive oil and sprinkle with flaky salt. Transfer slices to a baking sheet, and place under the broiler until golden brown, about 2-3 minutes. Remove from the oven and allow to cool slightly.
  • Spread a little mango chutney on each crostini, and top with 1-2 slices of roast beef and a thin slice of cheddar cheese. Sprinkle with red pepper flakes if desired!
  • Tip: For a more substantial appetizer, build this into a sandwich in a large piece of foccacia and slice into bite-size squares!
