Royal Roast Chicken and Bacon Sandwich
  • 1/2 pound thick cut bacon
  • 2 chicken breasts from a store-bought rotisserie chicken (sliced ¼-inch thick)
  • 2 tomatoes on the vine (sliced 1/4-inch thick)
  • 1 head bibb lettuce (leaves separated)
  • 1 stick unsalted butter (softened)
  • 8 slices Texas toast (toasted)
  • Kosher salt and freshly ground black pepper
Directions
  • Preheat a grill pan over medium high heat. Place the bacon slices on the grill pan and cook until crispy with nice grill marks, about 4 minutes per side. Remove to a paper towel lined plate.
  • To Assemble: Place two pieces of Texas toast on a clean work surface. Spread with 2 tablespoons butter and sprinkle with Kosher salt and freshly ground black pepper. Top one piece of toast with a couple slices of chicken, bacon, tomato, lettuce and top with remaining slice of toast. Repeat with remaining toast, slice in half and serve.
