Sesame Cheese Puff Bite-Sized Burgers

Sesame Cheese Puff Bite-Sized Burgers
Cheese Puffs
  • 1/4 cup whole milk
  • 1/4 cup butter
  • 1/2 cup flour
  • 1 teaspoon Kosher salt
  • 2 large eggs (plus 1 eggs beaten with 1 tablespoon water for egg wash)
  • 3/4 cup gruyere cheese (grated)
  • 1 tablespoon black sesame seeds (or white)
  • 2 tablespoons butter
  • 1 large yellow onion (diced)
  • 1 1/2 pounds ground beef
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon coarsely ground black pepper
  • 1 cup gruyere cheese (grated)
  • 1/2 cup dijon mustard
  • 1/2 cup mayonnaise
  • 2 cups fried, crispy shallots (to serve, optional)
  • For the Cheese Puffs: preheat oven to 400ºF. In a medium saucepan, combine milk and butter. Bring to just under a simmer.
  • Lower heat to medium and stir in flour and salt all at once, stirring vigorously with a wooden spoon until the mixture pulls away from the sides of the pan, about 2 minutes.
  • Place the dough in the bowl of a stand mixer with the paddle attachment and begin adding eggs one at a time, incorporating well before adding the next. Add gruyere and mix to combine. Transfer the dough to a pastry bag.
  • On two baking sheets lined with parchment, pipe 1 inch mounds about 2 inches apart. Brush tops with egg wash and sprinkle with black sesame seeds. Bake 10-12 minutes until golden brown. Remove and set aside to cool completely.
  • For the Sliders: in a large sauté pan, add the butter and place over medium heat. Add the onion, season with salt, and cook until caramelized, about 30 minutes. Set aside to cool completely.
  • In a large mixing bowl, add the ground beef, cooled onions, salt and pepper. Mix to combine.
  • On a parchment-lined 1/4 size baking sheet, add the beef mixture and press into an even 1/2-inch layer. Using a 2-inch cookie cutter, cut out small beef patties.
  • Preheat a skillet over high heat. Working in batches, add the patties to the hot skillet and sear for 1-2 minutes. Flip and cook for one more minute, or until both sides are seared. Remove to a plate. While patties are still hot, top with some more shredded cheese.
  • In a small mixing bowl, add the mustard and mayonnaise and set aside.
  • Split the cheese puff in half, like a slider bun. Spread some mustard mixture on each bun. Top with a bite-size cheeseburger and top with cheese puff. Garnish with a crispy, fried shallot, if desired.
  • Tip: do not open the oven when baking the cheese puffs.
