Spicy Honey Dijon Coleslaw

Spicy Honey Dijon Coleslaw
  • 1/2 head green cabbage (cored)
  • 1/2 head red cabbage (cored)
  • 3 carrots (peeled)
  • 1/2 bunch scallions (thinly sliced)
  • 2 tablespoon celery seed
  • 2 serrano chilies (thinly sliced)
  • 2 tablespoons Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey
  • 1/3 cup olive oil
  • Kosher salt and freshly ground black pepper (to taste)
  • Attach the shredder attachment to the bowl of a food processor. Shred the green cabbage, red cabbage and carrot, and remove to a large bowl. Add the scallions, celery seed, and serranos and toss to combine.
  • In a small bowl add the Dijon mustard, apple cider vinegar, honey and olive oil and whisk to combine. Season with salt and pepper. Drizzle around the outer rim of the bowl and toss to evenly coat. Either serve immediately for a crunchy slaw salad or allow to sit for 20 minutes for the flavors to meld and cabbage to soften.
  • Tip: Perfect dish to make in advance and keep stored in an airtight container in the refrigerator.
