Spicy Sloppy Joe Puffs with Carrot Salad

Spicy Sloppy Joe Puffs with Carrot Salad
  • 2 tablespoons olive oil
  • 8 ounces ground beef
  • 1/2 cup red onion (finely chopped)
  • 2 tablespoons pine nuts
  • 2 tablespoons harissa (store-bought)
  • 1 sheet puff pastry (thawed)
  • kosher salt and freshly ground black pepper (to taste)
Shaved Carrot Salad
  • 4 large carrots (peeled & cut into matchsticks)
  • 2 cucumbers (peeled and thinly sliced into 1/2 moons)
  • 1/2 cup pomegranate seeds
  • 2 limes (juiced, zest of 1 lime)
  • 1/2 cup fresh basil leaves (roughly chopped)
  • 1 teaspoon honey
  • 1/3 cup extra-virgin olive oil
  • Place a large sauté pan or skillet over medium-high heat. Add the olive oil and beef, and season with salt and pepper. Cook beef until browned, breaking up with wooden spoon or potato masher, about 8 minutes. Add the onion and pine nuts, and cook until the onions are translucent and the pine nuts are toasted, 4 minutes. Add the harissa and stir to combine. Remove from heat. Season to taste with salt and pepper. All to cool completely.
  • Preheat oven to 375ºF.
  • Roll out dough onto flat work surface. Cut dough into 8 squares. Spoon 2 tablespoons of beef mixture on the wide end of each square. Bring the corners together, creating a triangle. Place filled puffs on ungreased baking sheets, 2-inches apart. Bake for 15 minutes, until golden brown. Allow to cool for 10 minutes on sheet tray before serving.
  • Serve puffs with Shaved Carrot Salad.
  • For the Carrot Salad: in a large bowl, combine carrots, cucumbers and pomegranate seeds.
  • In a separate bowl or glass jar, combine lime juice and zest, basil, honey, olive oil, salt and pepper. Dress carrot salad with lime-basil vinaigrette to taste and toss to combine.
  • Tip: alternatively, take one whole piece of puff pastry and place on baking sheet. Leaving a one-inch border, spread the beef mixture in an even layer on the puff pastry. Bake tart in a 375ºF oven until golden brown. Serve shaved carrot salad on top.
