Sweet Potato Avocado Toast
  • 1 sweet potato (cut lengthwise into 1/4-inch slices)
  • 2 tablespoons olive oil (divided)
  • 2 avocados (peeled, pitted)
  • pickled red onion (to taste)
  • red chili flakes (to taste)
  • 1/3 cup pepitas (toasted, to garnish)
  • flaky sea salt (to taste)
Picked Red Onion:
  • 2/3 cup cider vinegar
  • 2 tablespoons sugar
  • 1 teaspoon Kosher salt
  • 1 red onion (peeled, thinly sliced)
  • Place the sweet potato slice into the toaster and allow to toast on the longest setting twice.
  • Remove and top with shingled slices of avocado, pickled red onion, red chili flakes, pepitas and flaky sea salt.
  • For the Pickled Red Onion: In a small saucepan add the vinegar, sugar and salt and bring to a simmer. Allow to simmer until the sugar and salt dissolve.
  • Pour over the red onions in a bowl and allow to sit at room temperature for 45 minutes or until cooled to room temperature.
  • To Toast Pepitas: In a small saute pan over medium high heat, add pepitas. Toast, tossing continuously to avoid burning, until golden brown and fragrant, about 5-6 minutes.
  • Tip: Get creative! Top sweet potato slices with your favorite toppings for the perfect snack!
