Swiss Chard and Ricotta Bruschetta
  • 3 tablespoons olive oil (divided)
  • 3 cups swiss chard (stems removed, thinly sliced)
  • 1 teaspoon red chili flakes
  • 1 cup ricotta
  • 4 slices rustic bread (cut 1/2-inch thick)
  • Kosher salt and freshly ground pepper (to taste)
  • Preheat a grill or grill pan to high heat.
  • In a large satue pan over medium-high heat, add 2 tablespoons of olive oil and swiss chard. Season with salt, pepper and chili flakes and cook until tender, about 10 minutes.
  • In a medium bowl, add ricotta and season with pepper.
  • Brush the sliced rustic bread with the remaining tablespoon of olive oil and toast on the grill or grill pan, about 1 minute on each side.
  • Spread the ricotta onto the grilled bread, top with sauteed swiss chard and serve.
  • Tip: Make the swiss chard and ricotta mixtures in advance. Assemble the bruschetta right before dinner or a party!
