Tomato Sauce Vinaigrette

What to do with that little bit of leftover tomato sauce? Turn it into a delicious vinaigrette!

Tomato Sauce Vinaigrette
  • 2-3 tablespoon tomato sauce (leftover in jar)
  • 2 tablespoon red wine vinegar
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon fresh chives (finely chopped, optional)
  • 1/4 cup extra-virgin olive oil
  • kosher salt and freshly ground black pepper (to taste)
Arugula-Basil Salad
  • 2 cups baby arugula
  • 1 cup fresh basil leaves (torn)
  • Parmigiano-Reggiano cheese (shredded with a vegetable peeler)
  • In a jar with a few tablespoons of leftover tomato sauce, add the red wine vinegar, balsamic vinegar, chives and extra-virgin olive oil. Close the jar and shake vigorously to combine. Season to taste with salt and pepper.
  • For the Basil Arugula Salad: in a large salad bowl, add the arugula and basil. Dress with the Tomato Sauce Vinaigrette, to taste. Top with cheese.
