Tricia's Terrific Turkey Chili
  • 1 tablespoon olive oil
  • 1 medium onion (medium diced)
  • 1 celery stalk (medium diced)
  • 2 medium carrots (medium diced)
  • 1 garlic clove (minced)
  • 1 pound lean ground turkey meat
  • 1/2 tablespoon ground cumin
  • 3 tablespoon chili powder
  • salt & pepper to taste
  • 1 green poblanos (seeds removed, medium diced)
  • 1 jalapeno (seeds removed, diced)
  • 1 bay leaf
  • 1 8 ounce can green tomatillo sauce
  • 1/2 cup low sodium chicken stock
  • 1 15 ounce can cannellini beans
  • 1 8.75 ounce can corn
Garnish:
  • 2 cups sour cream
  • 2 cups shredded Monterey cheese
  • 1 avocado (sliced)
  • 1/2 bunch cilantro
  • 2 lime (cut into wedges)
Directions
  • In a Dutch oven over medium high, heat olive oil. Add onion, celery, carrot, cook until tender, about 3- 5 minutes, add garlic. Add ground turkey, using the back of a wooden spoon, break into small pieces, cook until browned, about 5-7 minutes. Add the cumin, chili powder, season with salt and pepper to taste. Add the green poblanos, jalapeno, bay leaf, green tomatillo sauce, chicken stock, cannellini beans and corn. Reduce to low heat and simmer for 2-3 hours.
  • Garnish with sour cream, Monterey cheese, avocado, cilantro and lime wedges.
