Yucca With Mojo Sauce
  • 5 cups yucca (peeled, cut into 1-inch cubes)
  • 1/4 cup olive oil
  • 2 yellow onions (peeled, thinly sliced)
  • Kosher salt (to taste)
Mojo Sauce:
  • 5 cloves garlic (peeled)
  • 1/3 cup lime juice
  • 1/3 cup orange juice
  • 1/4 red onion (peeled, roughly chopped)
  • 1/2 teaspoon ground cumin
  • 1/4 cup olive oil
  • 1/4 cup cilantro
  • 2 tablespoons parsley
  • Kosher salt and freshly ground black pepper (to taste)
  • Bring a large pot of salted water to a boil. Add yucca and cook until tender, about 18-20 minutes. Drain, pat dry, remove to a bowl and set aside.
  • In a large saute pan over medium heat, warm olive oil. Add onions and cook until translucent, tender and buttery, about 5-7 minutes. Remove to the bowl with yucca and toss to combine (add a drizzle of olive oil if necessary).
  • For Mojo Sauce: In the carafe of a blender, add garlic, lime juice, orange juice, red onion, and cumin and blend until finely chopped. While the machine is running, stream in olive oil. Add cilantro and parsley. Blend until chopped. Season with salt and pepper.
  • To serve, plate yucca and onions and spoon mojo sauce over the top.
  • Tip: If your local market doesn't carry yucca, a russet potato or a sweet potato both make an excellent substitute!
