Challenge: New Year's
Dish: Vanessa's Uni Linguini with Caviar
½ cup cream
½ cup uni
1/8 cup pecorino, grated
2 tbsp chives
1 tbsp caviar
Heat cream and reduce until thickened. Take off heat.
Blend uni in blender until smooth. Strain uni into cream, season with salt & stir.
Cook pasta until tender, toss into sauce. Add grated cheese, toss together. Top with caviar and chives.
